Christine's pretend jaffa cakes

... Sponge Drops: 3 eggs; 5 oz sugar; 5 oz flour. I just use a hand mixer and mix it well. Grease patty tins and fill about a third full. Bake at 160 fan oven for about 5 minutes. Let them cool and spoon on some peel free orange marmalade. (I use Waitrose - it's lovely). Melt dark chocolate in microwave not for too long otherwise it burns. Spoon the chocolate over the marmalade and wait until set. I put mine sponge side down on baking parchment. They don't look as regular as Jaffa Cakes, but they are VERY moorish! My family loves them - they don't last long at all
