Barb’s edible cake

….. I managed to make an edible cake today! I used to be a first class baker and my 'normal' cakes were prize winners but I never mastered GF baking till now. This is a foolproof, easy, eggless Tea Loaf
4 oz butter (not marg) I cut a 250g pack in half 1 cup/4oz suger 1 cup/4oz mixed dried fruit 2 cups/8oz GF SR flour 1 heaped teasp mixed spice pinch baking powder 1 cup water
Melt marg and sugar in a pan Add fruit and allow to cool a bit Add flour, spice and BP Stir in the water - you can beat it to remove lumps if necessary. Pour into a loaf tin bake at 180C (350F) for 45 minutes. Leave in the tin to cool.
Its nice as it is, but better spread with butter.
