Have you got a recipe for millet flapjacks? The last one I tried came out rock hard.

I know what you mean about them turning out hard - I found it was something of an art to judge when to take them out of the oven. I came to the conclusion that actually you need to soak the millet flakes so they are slightly rehydrated before making them - I also suspect that the millet flake brand I now use would work better as they are a softer flake - apparently there are different varieties depending on where on the world it's grown (but Alex prefers other snacks now!).
The recipe I used was:
3 oz butter/vegetarian margarine 4 oz demerara sugar 4 oz millet flakes Melt butter/margarine in saucepan, add sugar and millet. Pack into greased 7" tin. Flatten with a warm spoon. Cook for 30 mins at 180C. Cut when cooked and leave in tin until cold.
