A cake for Easter

Here's an idea for a delicious Easter cake: Those of you who are bakers will probably have a favourite recipe for a Victoria sandwich baked in two tins. In addition you will need a block of white GF marzipan (Tesco do one), a lemon, apricot jam, a small quantity of butter cream and some Cadbury's mini speckled Easter eggs to decorate. Use the grated rind of the lemon for flavour when making the cake. Add a little lemon juice when making the butter cream. Cut marzipan in half and roll out each piece to slightly larger than the diameter of the cake. Using the cake tin as a guide you can cut two neat circles the right size, keeping the trimmings for decoration. Spread bottom of one layer of cake with apricot jam and the other with butter cream. Sandwich these together with a layer of marzipan in between. Spread top of cake with a thin coating of apricot jam and finish with other layer of marzipan, crimping edges to give an attractive finish. Decorate cake with mini speckled eggs and flower shapes made from marzipan trimmings. You can use a tiny quantity of butter cream to stick them in place. Enjoy!
