Steamed Syrup Pudding

If you're missing home-made golden syrup pudding and fed up with paying a ridiculous amount for the miniscule bought one, try this recipe. Just made this for pudding after our Sunday Roast and it went down a treat, devoured by coeliacs and non alike! Not one for dieters, but we did all climb Glastonbury Tor this afternoon in the bitter cold, so I figure we deserved it.
4oz plain GF flour 2 tsps GF baking powder 8oz fresh GF white breadcrumbs (i.e. made from a loaf, not bought breadcrumbs) 4oz butter or marg 4oz sugar 2 eggs 4 floz milk 4 tbsp golden syrup
Cream the butter and sugar, add the eggs and mix well. Add the dry ingredients and 2 tbsps syrup; stir and add enough milk to form a soft dropping consistency. Butter a 2 pint pudding basin; put the other 2 tbsp syrup in the bottom, then spoon in the pudding mixture. Cover with buttered foil or greaseproof paper, pleated to allow for rising, and tie down with string. Put into a pan with enough water to come half way up the basin. Bring to the boil, put on the lid and steam for 11/2-2 hours. Remove carefully, turn out and serve hot with custard or cream.
