Iris’ s Carrot Cake
Ingredients 3 oz raisins 8 oz grated carrot 2 oz chopped walnuts 2 tablespoons runny honey 6 oz butter 6 oz dark brown sugar 2 large eggs beaten 8 oz GF mix (eg Juvela) 1 teaspoon GF baking powder 1 teaspoon bicarb 1/2 teaspoon ground cinnamon 1/4 teaspoon ground cardomom
Method Pre heat oven to 180C Cream butter and sugar, add eggs, beat and add rest of ingredients, mix well. Put into 10'' loaf tin Bake for about 50 mins
(From Iris on original Coeliac Society message board). A teaspoon of xanthan gum can be added. Marmalade can be substituted for all or some of the honey.
