Rachel's Vegan cakes
Choc chip & orange cake (Gluten-free & vegan):
250g SR GF flour (I used Trufree No. 7) 200g soft brown sugar 125g vegan marg 3 tsp GF baking powder 275ml vanilla soya dessert (from Health food shops & some big supermarkets). Pinch sea salt Rind & juice 1 large orange 2oz dark choc chips
Put everything into a large bowl and mix well together. Bake in 8" square tin at Gas 4 for 45 mins - 1 hour.
When cool, ice with chocolate "butter" icing made with vegan marg, or just melted dark chocolate.
Lemon cake (GF & vegan)
As above, but substitute soya yogurt(plain or fruit) for the soya dessert, and lemon for the orange (leave out the choc chips).When cool, ice with lemon glace icing (lemon juice and icing sugar mixed together). Posted by Rachel.
