GF on a budget

GF board
Ingredients for starter & main meal (best if you make the soup the day before):
Turkey thigh (Sainsbury or Tesco)
1 x carrot, 1 x stick of celery, some parsley, 1 x tomato, stock cube or granules
boiled rice
broccoli (lightly cooked i.e. still crisp)
Economy mushrooms, cleaned, sliced, and cooked in some butter and olive oil
1 can gf cream of mushroom soup OR can of creamy chicken soup OR small pot of fresh single cream
Spoon or two of wholegrain mustard
squeeze of lemon
Method (day 1): make soup
Put turkey thigh and vegetables into a pot (pressure cooker if you have one, saucepan if not). Cook. Take out the turkey thigh and put to one side. Take out vegetables and discard.
Allow soup to cool so that you can skim off excess fat.
next day (day to serve)
Prepare soup - serve one of several different ways:
Italian stracciatella ('rags'): beat one egg for each person, add in generous amount of chopped fresh parsley and grated parmesan cheese. Allow broth to come to gentle boil and pour the egg/cheese mixture in to the soup. It will cook quickly and rise to the top. Serve with additional parmesan.
OR
chop finely a selection of vegetables (carrots, celery, peppers etc.) and add to soup and cook until soft and serve.
The main course:
Cook some rice.
Cook (lightly) broccoli
Take the turkey thigh and remove meat from bone. Chop roughly (reasonable sized pieces). Set aside
Cook the sliced mushrooms in a large frying pan. When cooked add the turkey meat. Add the condensed creamy chicken OR mushroom soup OR add cream together with a cup of the broth. Add wholegrain mustard. Add spoon of lemon juice. Season to taste. Allow to heat through (not long).
Put cooked rice into a greased oven-proof dish and make an indentation in the centre. Put the broccoli in around the dish with the stems pointing towards the centre and the florets facing the outside. Pour the meat and mushroom mixture into the centre covering the stems of the broccoli and the rice. If you like you can top the whole with grated cheese (any type).
Bake in a medium oven for approx 20 minutes until heated thoroughly.
Serves 4 and should cost around £4.00 (excluding cost of cheese).
