Toad in the hole
Posted by Jacqui on 18/9/2004
(From GF board)
I put teaspoon of baking powder then 95g juvela mix, make a well in the middle put 1 egg in the well, mix from middle, slowly add 4fl oz of water & 4 fl oz of milk, mix on high speed for at least 2 mins (I mix together 5 mins b4 I need to cook) put in VERY hot fat. I put in gas 7 for 5 mins then turn down to 5 1/2 till done.
They come out crispy on the outside and soft inside and they rise.
I use this for yorkshire puds and toad - I use asda sausages for toad - my non coeliac partner loves them (he is a Yorkshire man)

Gf board
The recipe I got from a board member is:
3 heaped tablespoons cornflour
3 medium eggs beaten
140ml or 1/4 pint milk
2 tablespoons vegetable oil
cook for 25 minutes @200 or gas 6
Works every time for me.
I also find the following batter mixes work well:
For pancakes I use:
10oz doves farm flour
1 pint milk
2 eggs

GF board
100g gf flour (I use Juvela Harvest mix)
1tsp baking powder
1tsp xanthum gum
2eggs
up to 1/2 pint milk (I use soya)
put sausages in pan in oven at 220 in pan with vegetable oil.
Beat together ingredients until frothy and thick - add milk gradually to make sure you dont add too much.
Pour batter over sausages straight after mixing, don't let it stand.
40 mins cooking or when top is brown and set.
I use this batter for yorkshire puds too.
Hope it works for you, it may be you have to adjust the milk a bit as soya milk tends to beat up a bit thicker.
Eli.

Toad in the hole & Yorkshire puddings
From Eileen:
First brown the sausages.
Whisk 3 heaped tablespoons of cornflour, (you could try Dove's, although I haven't tried it with this recipe), with 3 medium eggs, 140ml milk, salt and pepper, 1/2 teaspoon baking powder, (optional).
Place sausages in a tin, pour the mix over and bake at 200C, Gas 6, for approx 25mins.

From Rose:
….if you haven't got a special mix, just add 1 tsp baking powder to your gf flour and that should do the trick!

From Kat:
The secret to getting light, beautifully crisp yorkshire puddings is heating up the tray and the oil to a high temperature. Once the sausages are cooked, I turn up the heat to the highest temp possible and then turn it down once it reaches temperature and I've put the batter in…..
