Gluten free dumplings
Posted by Helen (Notts) on 15/11/2004,GF board
Inspired by the yorkshire puddings recipe I have just had a go at dumplings .. and I may never move again! I think this was a dress rehersal for Christmas dinner.. you know, when you sit around all afternoon totally dazed by how much food you have just eaten and wondering if you will ever be able to move again! They turned out light and fluffy and tasted really lovely, so much so that I will not buy a red dress for Christmas in case I'm mistaken for Santa (planning LOADS of casseroles now!!) I used
8 oz Doves farm plain flour 4 oz tesco vegetable suet (gluten free, I checked!) 4 level teaspoons of gf baking powder (supercook) and water as necessary. I mixed it all together and it looked quite fragile but it shaped into balls easily which I then rolled on more of the doves farm flour to take the "sticky" off them. ( Made 10 dumplings) Placed them in a microwaveable dish with about 2 tablespoons of water and covered with clingfilm which I had put a pleat in to allow room for expansion. Cooked on high for four minutes (750 watt setting)
They do look a bit undercooked owing to being cooked in a microwave but if you drizzle a little of the gravy over them they look very moreish.
I had to eat one "in the interests of research" of course before my dinner when I ate another two.
I have to say I deserve to feel as "pigged out" as I do!
