....Just come back from a weeks surfing in Lanzarote. This was my first time abroad since diagnosis. I didn't have any problems, I printed the translations Peter (Stirling) had posted on the support board (thanks Peter) and flashed these about in every restaurant we went in. As well as Spanish restaurants we ate Chinese, Italian and Indian without any problems, waiting staff and chefs that were sent out to see me all seemed to be aware and catered for me brilliantly. Yes I was worried if I did get glutened as it would have hit whilst in a wetsuit on a beach without facilities but all was good. The surf was superb too!! Just ache and am totally shattered now!

"Por orden medica me esta prohibido ingerir alimentos que contengan o deriven del trigo, avena, cebada y centeno, (pan, galletas, bolleria, macarrones, fideos, croquetas, malta, embutidos porque pueden contener almidon de trigo, etc.) por lo tanto no me esta permitido tomar ningun alimento que este empanado, rebozado o espesado con harina.
Puedo tomar maiz, arroz, patatas, verduras, pescados y carnes (todos estos alimentos a la plancha), hervidos, asados, guisados (saldas espesadas con maicena o patata).
El aceite usado para los fritos (por ejemplo patatas fritas) tiene que ser limpio (que no haya sido utilizado para freir empanados o rebozados) para que no este contaminado."
Most Spanish restaurants don't know about coeliac disease or gluten so "sin pan, sin harina" is the more useful than "sin gluten" or “celiaca”. However most Spanish food is prepared freshly on the premises (unlike the UK) and not full of fancy sauces (unlike France) so in lots of ways it's easier and people in small restaurants are usually helpful. Start with:
“No puedo comer trigo, cebada, centeno, avena” ( I can’t eat wheat barley, rye, oats) and then before they start to panic make it clear what you CAN eat:
"Puedo comar..." (I can eat..) or "Puedo tomar..." (I can have...) "carne, pescado, huevos, arroz, patatas, maíz, leche, queso, fruta, verduras, ensalada, aceite, tuercas, azúcar” (meat, fish, eggs, rice, potatoes, maize, milk, cheese, fruit, veg, salad, oil, nuts, sugar etc) “a la plancha” (plainly grilled) or “asado, frito, hervido, asado…” (grilled, fried, boiled, roasted) “sin harina” (without flour) or "sin salsa" (without sauce) or “sin espesamiento” (without thickening).
Puddings will be more difficult. “Harina de maíz” (cornflour) is used for some things like the ubiquitous pudding “flan” (crème caramel) but you need to check they have not used “harina de trigo” (wheatflour).
Go early (not difficult since the Spanish eat lunch and dinner so late!), be charming, say it in Spanish and there will be no problem (in fact although they will think you a lot less odd than a vegetarian!). The Spanish are used to customers being very assertive about food. I always cringe when I hear my Spanish friend asking “But is this fish really fresh? Is this the best steak you have?” but apparently it’s normal, so asking what’s in the sauce is not considered a personal affront (as it might be in France).(Incidentally unless you're eating somewhere very trendy - and there are some fantastic new cuisine type places esp in Catalonia - I wouldn't confuse them with requests for meals with millet or buckwheat flour).
Shopping Tips:
There are usually GF products in health food shops called HERBOLARIOS. In big cities you can also buy GF products (including a very good range of Proceli foods) in the department store "El Corte Ingles."

I have a condition called coeliac disease, which means I cannot eat the smallest amount of wheat, rye, barley or oats.
Could you prepare my meal by using maize, rice, millet, buckwheat, soy flour or potato starch or totally without any cereals, please?

Información sobre mi enfermedad. Padezco de una enfermedad celíaca/dermatitis herpetiforme. Por esta razón mi dieta no puede contener ni la más pequeña cantidad de los siguientes cereales: trigo, avena, centeno y cebada.
¿Tiene en su menú comida adecuada para mí, o puede quitar de mi ración los mencionados cereales, por ejemplo, no espesando la salsa ni empanando el bistec? ¿Puede usar alguna otra harina, p.ej. de maíz, de arroz, de alforfón, de mijo o de patatas?

Una petición para el cocinero
Ya que padezco de una incompatibilidad de albúminas de cereales (centeno, trigo, cebada y avena, espalta), la comida no debe contener harina, harina para rebozar, sémola, fideos, etc.
Si el guiso/plato escogido contiene algunos de los ingredientes mencionados que no puedon ser omitidos, le ruego hacerme otra proposición.

When we went to Puerto del Carmen a few years ago we found the lovely El Varadero in the old town harbour area. The waiter was friendly and when I showed him my translation he said it was no problem. When we returned a few days later for a second visit he remembered me and my diet. He said the chef could do most sauces without flour.

WE stayed in Costa Teguise last year and found similar positive experiences in most restaurants that we tried. generally if you choose the traditional cooking establishments, food seemed to be cooked from fresh ingredients and they accomodated GF quite well. I took the translations printed in the Crossed Grain from Spring ( or possibly Summer 2005) edition and this proved useful when confirming criteria with the waiters.
I didn't find quite so much GF food in shops, but one supermarket had a few packs of GF biscuits and crackers

.......... food was fantastic, I printed some translations peter (stirling) has for spain ....(please see above) ....... Each resturant was brilliant, wonderfuly fresh cooked food no messing, all very very good. Canary potatoes are great, wonderful fresh caught fish, the harbour has a lovely fish resturant, with a fish shop attached to it, you can watch them catch it in the day then feed you with it, marvellous. They have lots of chains of Lanis, not a chain person, I prefer the smaller family run places. A really nice Italian resturant, near a bank (very posh looking always has a queue outside, think you can watch them bake pizzas from the road, they were really good too.
Peters translations were a god send and got me fed fine for a week!
