Gingernuts Ingredients:
4oz GF Self raising flour 1tsp heaped of dry ground ginger 1tsp Baking Soda 1 ½oz Granulated sugar 2oz Butter 2oz Lyles Golden Syrup
Method:
Sift the flour, ginger and bicarb soda into a bowl. Add the sugar and lightly rub in the butter. Add syrup and mix to a smooth paste. I just bung it all in the food processor and turn it on for about 45 seconds or until the dough forms into a large ball.
Roll into 16 balls and place on a greased baking tray. I normally need to use 2 trays for this.
Make sure you leave plenty of space between the biscuits as they will spread out. Flatten each biscuit slightly.
Bake for around 10 minutes at 350F/GasMark 4 .
If using 2 trays and they are on 2 shelves, swap them over at 5 mins to ensure they are both cooked evenly .
Take out of the oven and cool. Enjoy!

Please note that there is an amendment to this. Use half the recommended amount of golden syrup in the recipe as it will work better.

Walnut Cookies/Biscuits

I made some biscuits this afternoon using David Mc's recipe for ginger nuts on Supp. Board. I left out the ginger and added 4 oz of walnut pieces. I was very lazy and melted the butter, sugar and golden syrup in a saucepan and added it to the dry ingredients. I doubled David's quantities. I followed his advice to use less golden syrup. They were oily when I made them into ball, but they are delicious. Thank you, David.
